Harvesting and Curing Your Home-Grown Olives

Ever since I posted about growing olives in pots, I’ve received lots of emails about growing olives. It seems a lot of people would love to have a couple of olive trees growing on their patio or balcony. And quite honestly, who would blame them? Olives are beautiful trees that create tasty fruit! So you can imagine how excited I was to see that the agricultural masterminds at UC Davis (which has an excellent agriculture program) have recently published a whole bunch of information about growing olive trees and curing the fruit:

I am lucky enough to have just moved into a house with an olive tree in the garden. Olives are my guilty pleasure often I can get through a whole pot at one sitting (oops!). I was wondering if anyone could give me any advice on when to harvest and the method for harvesting olives? I would like to be apply to supply friends and family with some beautifully marinated green gems! Many thanks, Antonio.
